We left with about 10 pounds of apples, so now I'm working through some apple recipes. Last year, I made applesauce, apple bread, and two pies. We'll make pies again this year, and I may puree some for Mia, but other than that, I'm looking to try some new recipes. The bread was okay, but I wasn't a fan of that exact recipe, so I'm on the lookout for something similar. In the meantime, I tried the recipe below today. Yum! :)
MAPLE-DRIZZLED OATMEAL APPLE MUFFINS
1 1/3 c. all-purpose flour
1 c. Quaker Oats (quick or old fashioned, uncooked)
1/2 c. sugar
1 tbsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 c. low fat or skim milk
1/3 c. (5 1/3 tbsp.) butter, melted
1/4 c. syrup
2 egg whites, slightly beaten
1 c. chopped apple
Pecan halves, optional
Mix first 5 ingredients well. Add combined milk, butter, syrup and egg whites, mixing just until moistened. Gently stir in apples.
Pour into greased muffin tins (or paper cup liners). Fill almost full. Top with pecan halves. Bake 20-25 minutes at 400 degrees F (NOTE: I had to bake mine for about 35 minutes). or until toothpick comes out clean. Cool slightly.
For glaze, blend together:
3 tbsp. powdered sugar
1 tbsp. syrup
Mix until smooth and drizzle over muffins. Makes 12 muffins

Mia likes to sleep with her snuggly. When I went in to check on her during her nap, this is what I found. She never even woke up when I took the picture. A couple nights before, I had left it hanging on the corner of the crib when I put her down for the night. When I checked on her right before I went to bed two hours later, she had scooted to the end of the crib and pulled herself up just enough to get it down.

Thanks so much for sharing! I'm looking for recipes too after picking 13 pounds last weekend. These muffins actually sound a little bit healthy! Yay!
