
Poor Kevin is never going to leave me alone again, because every time he does, I go shopping. The Bumbo, with the play tray pictured above, retails for $50. I found Mia's for $30 at Once Upon a Child. You can see she thinks she's a big girl now.
A storm system is moving in to the NoVa area, which hopefully will put an end to the high temps and high humidity we've been experiencing the last few days. This afternoon, it's hot, humid, and drizzling rain, not pleasant weather to be outside in. So while Mia's napping, I think I'm going to make peanut butter-oatmeal cookies. I'm not a huge fan of peanut butter cookies, or oatmeal cookies, particularly, but these? These are something special. I've made them for a few different occassions and they've always gotten rave reviews. It's now one of my go-to recipes. I don't remember where I found it, or I would give credit to the orignal, but here it is:
Yummy Peanut-Butter Oatmeal Cookies
2 cups quick-cooking rolled oats
1 1/4 c all-purpose flower
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 c (2 sticks) unsalted butter at room temperature
1 c creamy or chunky peanut butter
1 c granulated sugar
1 c firmly packed brown sugar
2 large eggs, beaten
1 tsp vanilla extract
1. Preheat the oven to 350 F. In a medium-sized mixing bowl, whisk together the oats, flour, baking powder, baking soda, and salt. Beat together the butter and peanut butter in a large mixing bowl until smooth. Gradually add both sugars, beating until smooth, then beat in the eggs and vanilla. Add the oat and flour mixture, a little at a time, beating until well-combined. Drop the dough by rounded teaspoonfuls onto ungreased baking sheets about 1 inch apart.
2. Bake until lightly browned, about 12 minutes. Transfer to wire racks while still warm and cool completely. Store in airtight containers.
